When Javier Gonzalez Barbosa and his wife Lorena Vieyra Guzman first came to Nepal, they visited many Mexican restaurants but could not find the taste of their hometown. They then started cooking Mexican dishes at home and often had guests over for dinner. After numerous compliments and suggestions to open a restaurant, they finally decided to sell food online in 2018.
Their food gained a lot of popularity online. One of their customers recommended to opening a physical restaurant. The restaurant, 'Crazy Mexican' is opened by the couple and Barbosa's siblings; Ana Gonzalez Barbosa and Lucero De Gonzalez. The name of the restaurant speaks for itself. ‘Crazy Mexican’ indeed serves crazy Mexican cuisines.
"We don’t make our menu, our customers are the ones who make it. They ask for a specific food, we make it and then add it to the menu”, Guzman says.
After all those recitals, all I wanted was to try the food. I went for the dishes suggested by their manager Dhrub Yadav. I had three varieties of food and their corn chips.
First I tried their corn chips with beans, salsa and Mexican rice. Dipping crispy corn chips with salsa and a spoon of beans and rice was the combination of spicy and sweet at the same time.
The rice was fried and then colored with tomato paste, so it looked red.
“We make the chips ourselves in Mexican style. The machines we use to make chips are brought straight from Mexico”, she explains.
Next dish was Enchiladas Suizas, cheesy shredded chicken enchiladas topped with a creamy tomatillo sauce and green sauce. The dish was surprisingly delicious with crunchy corn tortillas as its base.
Then I had Tacos with chicken in it. With the crunchy tacos, tendered chicken, vegetables, sauces and lemon made every bite satisfying.
“The process for cooking meat is very long. It is cooked for almost 5 hours, that is why it is so tender. We also decorate it with Mexican salad, because it has three colors of our flag”, she adds.
Last dish I tried was Tacos Dorados, which had a small rolled-up tortilla that contained a filling including chicken and cheese. The filled tortillas were deep-fried, making them crispy, crunchy and cheesy all together.
The Crazy Mexican families are happy to get positive feedback, love and support from their customers. Soon, Crazy Mexican is going to sell their Corn Chips and Corn Tortillas in all the supermarkets. They are also planning to open their new franchise in 2023.
While asking about the protocols they are following during the COVID scare, she said, “We have kept hand sanitizer at the entrance and after the customers leave, we clean and sanitize the whole restaurant.”
